Simply Home Cooking
Everyone can appreciate a good home cooked meal. Having fond memories of my grandmother cooking, her best were Sunday dinners of good down home cooking and nothing smells better than the goodness home cooked food, whether it was a main dish, casserole, fresh baked breads, dessert, cake, cookies or pies. It was pure simple goodness!
For centuries
families of all ethnicity have been preserving their family traditions by
preparing home cooked favorites for an ordinary sit down dinner or for a
special celebration. It’s very satisfying knowing that for every meal or
celebration you can count on a good home cook meal. It’s one of the staples of
our life that assures us that we can get a well-rounded balance of good
nutrition and the heartiness of a good home cooked meal.
Many
home-cooked meals are very simple and easy to make with little
prep-time and the meal taste as if you spent hours in the kitchen
preparing it. Chicken Pot Pie is one of my favorite dishes and it is so
savory.

Chicken Pot Pie
1/2 cup butter
1/4 cup all-purpose flour
1/4 teaspoon nutmeg
2 1/2 cups chicken broth
2 cups diced, cooked chicken
2 cups mixed vegetables
1 deep dish pie crust
1 refrigerated pastry pie crust sheet, soften
2 tablespoon butter, melted
Dash of pepper
Mix 1/2 cup butter, blend in flour and seasonings. Add chicken broth. Mix well. Cook over low heat, stirring constantly, until thickened. Add the vegetables and simmer for 5 to 6 minutes. Pour into deep pie crust dish. Place pie crust sheet over top, seal the ends and brush top of pie crust with 2 tablespoon melted butter. Make about 4 to 5 small slits in pie crust to let steam escape. Bake in preheated oven at 350 degrees for 15 to 20 minutes or until crust is golden brown. Serves 6.
Old Fashioned Meat Loaf
1 lb. ground beef
3 slices bread
1 cup milk
1 egg, beaten
1/4 cup minced onion
1 tablespoon Worcestershire sauce
1/4 teaspoon celery salt
1 teaspoon salt
1 small bottle ketchup
Cut bread into cubes and place in mixing bowl. Add milk, egg and seasoning. Place lightly in baking dish or loaf pan. Spread ketchup over top of ground beef mixture. Lightly cover with foil. Bake 45 hour at 350 degrees.
Salisbury Steak
2 lb. ground chuck
1 (4 oz.) can sliced mushrooms, drained
1 (10 3/4 oz.) can mushroom gravy
1/4 cup minced onion
2 tablespoons minced green pepper
1 clove garlic, minced
2 tablespoons dried parsley flakes
2 teaspoons salt
1/4 teaspoon pepper
4 tablespoon Worcestershire sauce
2 tablespoons butter or margarine
1/8 teaspoon thyme
Combine ground chuck, onion, green pepper, garlic, parsley, salt, pepper, thyme and 2 tablespoons Worcestershire sauce. Shape into 3/4" inch thick patties. Brown patties in both on both sides. Drain off any excess fat. Mix mushroom gravy, 2 tablespoons Worcestershire sauce and mushrooms. Pour over meat patties. Cover and simmer 30 minutes. Serve with gravy.
