Homemade Cookies

I just love fresh homemade cookies. The aroma of freshly baked cookies smells so wonderful. I started baking cookies at an early age. These are two of my most favorite cookie recipes to bake.

Ginger Snap Cookies

3/4 cup shortening
1 cup sugar
1 egg
1/4 cup molasses
2 cup all-purpose flour
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon ground cloves
2 teaspoon baking soda
1 teaspoon salt

Cream together shortening, sugar, egg and molasses. Add dry ingredients. Refrigerate until chilled and roll into small balls then roll in sugar. Bake at 350 degrees for 8 to 12 minutes on an ungreased cookie sheet. 


Peanut Butter Cookies

3 cups sifted flour
2 teaspoon baking soda
1 cup shortening
2 eggs, beaten
1 teaspoon vanilla
1 cup brown sugar
1/4 teaspoon salt
1 cup granulated sugar
1 cup peanut butter, creamy or chunky



Combine and sift flour, baking soda and salt. Cream shortening and sugars together. Add eggs and mix until smooth. Add peanut butter. Stir well. Add vanilla and blend thoroughly. Add dry ingredients and mix thoroughly. Batter will be stiff. Form into tiny balls, place on greased baking sheet. Press with back of fork. Bake at 375 for 10 to 12 minutes. Yield about 8 dozen cookies.
